Calzone Dough

1 package yeast

1 cup water 115 degrees

¼ cup olive oil

1 teaspoon of salt

3 cups flour

In a large bowl, dissolve yeast thoroughly in water and oil.  Add the flour slowly while mixing.  Add salt at the same time and blend together well.  On floured working surface, knead dough for 10 minutes until it is smooth and elastic.

Roll the dough into a ball, place in a greased bowl, cover with a damp cloth and place in a warm area for 90 minutes.

When the dough has risen to about double its bulk, punch it down and roll into a ball.  Divide the ball into four equal pieces, roll them into balls and cover with a damp cloth until ready to use.  Makes 4 Calzone shells.
