Cherry Coffee Cake

 

 

 

3 eggs                                                         

1 ½ cups sugar                                               

¾ cup vegetable oil                                          

1 teaspoon of vanilla extract                                     

¼ cup orange juice                                           

3 cups flour                                                   

3 teaspoons baking powder                                       

1 20-ounce can cherry pie filling                              

 

Preheat oven to 350º.

 

Beat together eggs, sugar, oil vanilla and orange juice.  Add flour and baking powder and beat well (batter will be thick).  Spread ¾ of the batter into greased pan.  Put cherry pie (or other fruit) filling over batter.  Drop rest of batter on top.  

Bake at 350º for 1¼ hours.
