Corn Bread

 

Serves: 8

 

 

1¼ cups of flour                                               

¾ cup yellow cornmeal                                        

¼ cup sugar                                                  

2 teaspoons baking powder                                      

½ teaspoon salt                                              

1 cup of milk                                                     

2 egg whites or egg substitute                                  

3 Tablespoons olive oil                                        

 

Mix all dry ingredients in one bowl.  Mix all wet ingredients in another bowl.  Add wet ingredients to dry and mix by hand until moistened.  Pour batter into a greased 8 x 8-inch baking pan.  Bake 20 - 25 minutes at 400º.
