Fresh Primavera Soup

 

Serves: 6

 

 

2 tablespoons olive oil                                        

3 cups mushrooms - fresh sliced                                

½ cup onions - chopped                                       

½ cup green bell peppers - chopped                           

2 cups zucchini - chopped                                      

4 cups water                                                   

3½ cups stewed tomatoes - Italian style, un-drained and chopped

2½ cups vegetable broth                                     

1 cup Ronzoni Tubettini, uncooked                              

Parmesan cheese                                                

 

In large saucepan, heat oil.  Add mushrooms, onion and red or green pepper; cook until almost tender.  Add zucchini; cook 1 minute.  Stir in water, stewed tomatoes and vegetable broth; heat to boiling.  Stir in uncooked pasta; heat to boiling.  cook, stirring occasionally, 8 - 10 minutes, or until pasta is tender.  Salt and pepper to taste.  Serve sprinkled with Parmesan cheese.
