Fruit-In-Crust Cheesecake Pie

 

Serves: 8

 

 

1 cup of flour                                                    

1 cup Quaker Oats                                              

2/3 cup of brown sugar firmly packed                              

½ teaspoon baking powder                                     

½ cup butter                                                 

10 - 12 ounces fruit preserves                                  

½ cup powdered sugar                                         

2 tablespoons milk                                             

1 ½ teaspoons vanilla extract                                

3 ounces cream cheese                                           

2 cups whipped cream                                           

 

Preheat oven to 350º.

 

Mix flour, oats, brown sugar, baking powder and butter until crumbly.  Reserve 1 cup of these crumbs.  Press remainder of crumbs on the bottom and sides of un-greased 9-inch pie pan.

 

Spread preserves over unbaked crust.

 

Sprinkle reserved crumbs over preserves and pat gently.

 

Bake at 350 degrees for 20 - 25 minutes until golden brown; cool.

 

In a small bowl, blend powdered sugar, milk, vanilla and cream cheese until smooth.  Fold whipped cream into cream cheese mixture and spoon into baked piecrust.  Store in refrigerator.
