Golden Potatoes

 

Serves: 6

 

 

¼ cup onions - chopped                                       

2 Tablespoons butter                                            

2 Tablespoons flour                                            

1½ cups of milk                                                

½ teaspoon of dry mustard                                       

1/8 teaspoon of black pepper                                       

1 8-ounce package sharp cheddar cheese                         

4 cups potatoes - thinly sliced                                

1 9-ounce box frozen green beans                               

 

In saucepan, cook onion in butter until tender; stir in flour until smooth.  Add milk, mustard and pepper; cook and stir until thickened.  Add cheese; stir until melted.  Add potatoes and beans.  Turn into greased 2-quart baking dish.  cover; bake at 350° for 50 minutes.  Uncover; bake 25 minutes or until potatoes are tender.
