Hearty Baked Macaroni


Serves: 6



2 cups tomato purée                                            

1 cup of water                                                    

2 teaspoons Italian seasoning                                  

1 teaspoon of garlic powder                                       

3 cups cottage cheese                                           

½ teaspoon onion powder                                      

8 ounces elbow macaroni - uncooked                             

4 ounces mozzarella cheese                                     


In a small bowl combine tomato puree, water, Italian seasonings and 1/2 teaspoon garlic powder.  In another bowl, combine cottage cheese, onion powder and the remaining garlic powder.  Spray a 9 x 9-inch casserole dish with vegetable cooking spray and spoon 1/3 of the tomato mixture evenly over the bottom.  Layer 1/2 of the macaroni, all of the cheese mixture and top with 1/3 of the tomato mixture.  Add remaining macaroni and cover with remaining tomato mixture. 


Cover and bake at 350º for 1 hour.  Uncover and top with mozzarella cheese.  Bake uncovered until cheese melts, about 5 minutes.  Let stand 10 minutes before serving.
