Lima Bean Soup

 

Serves: 8

 

 

8 cups water                                                   

1 16-ounce package lima beans                                  

1 carrot - finely chopped                                      

 

Place dry beans in 8 cups of water and bring to a boil.  Let boil for 2 - 3 minutes.  Remove beans from pot (reserve liquid).  Remove shell from beans.  Place beans in pot and add 4 cups of the liquid or enough to cover the beans by 1/2 inch.  Add finely chopped carrot.  Simmer for 1 hour or until consistency is creamy.
