Oatmeal Bread

 

Serves: 8

 

 

2¼ cups Quaker Oats                                         

1 cup of flour minus 1 Tablespoon                                 

1 teaspoon of baking soda                                         

2 teaspoons baking powder                                       

1 teaspoon of cinnamon                                            

2 eggs or egg substitute                                       

3 Tablespoons honey                                            

1 cup of plain yogurt                                              

2 Tablespoons vegetable oil                                    

2 teaspoons vegetable oil                                      

2 teaspoons vanilla extract                                    

 

Preheat oven to 350º.

 

In a medium bowl, combine oats, flour, baking soda, baking powder, and cinnamon.

 

In a large bowl, combine remaining ingredients.  Beat on low speed of an electric mixer until blended.  Beat in dry mixture, adding half at a time.  Continue to beat just until all ingredients are moistened.

 

Place batter in a 4 x 8-inch nonstick loaf pan or one that has been sprayed with a nonstick cooking spray.

 

Bake 30 - 35 minutes, until golden brown.

 

Cool in pan 10 minutes, then invert onto a rack to finish cooling.
