Potato Soup


Serves: 8



1 Tablespoon olive oil                                         

1 onion - chopped                                              

1 carrot - chopped                                             

2 stalks celery - chopped                                      

½ teaspoon salt                                              

¼ teaspoon black pepper                                      

3 potatoes - w/o skin, cut in ½ " cubes                       

4 cups milk                                                    

4 tablespoons flour                                            

½ cup dry milk powder                                        

2 Tablespoons butter                                           


Heat olive oil in stock pot, add onion, carrot, celery, salt, and pepper.  Sauté until onions are translucent.  Add potatoes and cover with water.  Bring to a boil and cook until tender.  Mix milk, flour and powdered milk and stir or shake until all lumps are gone.  Add remaining ingredients and heat until warm.
