Rice Pasta Primavera

 

Serves: 6

 

 

1 Tablespoon olive oil                                         

1 cup of broccoli - chopped                                       

½ cup green bell peppers - chopped                           

½ cup red bell peppers - chopped                             

½ cup onions - chopped                                       

2 cloves garlic - finely chopped                                

2 carrots - cut into thin strips                               

½ cup frozen pea pods (optional)                             

Salt to taste                                                  

2 cups tomatoes - fresh chopped                                

½ cup Parmesan cheese                                        

1 package Pastariso Brown Rice Spaghetti                       

 

Cook all vegetables except pea pods in large skillet with tablespoon of oil until tender (but still crisp).  Add pea pods last minute of cooking.  Stir in tomatoes, salt and cook for a couple of minutes.  Cook pasta as instructed on package.  Serve vegetable sauce over pasta and top with lots of cheese.
