Serves: 30
1 1/2 cups flour
¼ teaspoon baking soda
¼ teaspoon salt
½ cup butter
½ cup brown sugar
1 egg
1 egg yolk
¼ teaspoon vanilla extract
1/8 teaspoon maple flavoring
½ cup pecans - unsalted
1 egg white
4 ounces unsweetened baking chocolate
2 tablespoons butter
1 cup of confectioner’s sugar
½ cup milk
Sift together the flour, baking soda and salt. Blend together ½ cup butter and brown
sugar. Add 1 egg and 1 egg yolk and
blend in the vanilla and maple flavoring.
Gradually add the dry ingredients and mix thoroughly.
Split the pecan halves and arrange in groups of 3 on a
greased baking sheet to resemble the head and legs of a turtle. With a rounded ball of the cookie dough, dip
in egg white and place on group of pecans.
Bake in a 350º oven for 10 - 12 minutes. Do no over bake. Cool and frost.
Frosting mix: Melt 4
squares of unsweetened chocolate and combine with the 2 tablespoons butter,
confectioners' sugar and milk.
