4 tomatoes
1 small onion chopped
2 Tablespoons olive oil
2 cloves garlic chopped
1 cup of tomato purée
¼ cup tomato paste
1 cup of vegetable stock
1 teaspoon of oregano
½ teaspoon basil
½ teaspoon thyme
1 Tablespoon soy sauce
Pinch black pepper
Peel and quarter the tomatoes (submerge in hot water to loosen skins). While sautéing the garlic in olive oil heated in a large pot, blend the tomatoes in a food processor or blender. Strain blended tomatoes to get rid of seeds if desired. Add to the pot tomatoes, onion, tomato puree, tomato paste, and vegetable stock. Let simmer at medium to low heat for about 45 minutes. Add spices and let simmer another 15-20 minutes.
