Tomato Sauce




1 large onion - chopped                                       

1 clove garlic - minced                                        

4 cups tomatoes - chopped, from the garden                     

1 teaspoon Italian seasoning                                    

˝ teaspoon salt                                              

˝ teaspoon sugar                                             


Sauté onion for 1 minute then add garlic and sauté 1 additional minute.  Stir in tomatoes.  Continue to stir, breaking up tomatoes until mixture is reduced to a thick, chunky sauce.


Stir in herbs, salt and sugar.  Reduce heat; simmer 30 minutes stirring occasionally.
