Vegetable Frittata

2 tablespoons olive oil                                        

1 potato sliced                                                 

½ onion sliced                                               

Any vegetables, broccoli, cauliflower                          

6 eggs well beaten with a little water                         

Pinch salt                                                      

Pinch black pepper                                             

 

Pars boil the vegetables (not potato or onion).  Sauté a small thinly sliced potato with the onion in oil.  When soft, add vegetables and sauté for a few minutes until they begin to soften.  Add eggs, salt, pepper to the pan.  Once the bottom starts firming place pan 350º oven for 15 minutes or until firm on top.  If you finish the cooking on top of stove then cover and check frequently (about 15 minutes) until the top is firm.
